Taco Lasagna :
soft 6 inch tortillas
1 1/2 pounds ground beef or turkey
taco seasoning packet
1 diced tomato
1/2 diced red onion
1 jalapeño, seeds removed, and finely chopped
1-2 chopped scallions
1 pint heavy cream
2 cups Colby Jack and Monterey Jack cheese
4 tbsp butter
sour cream to top
Brown meat and drain grease, season meat to taste. To make cheese sauce bring heavy cream and butter to a boil and slowly add cheese until thickens. Add a pinch of Cajun season to spice.
With red onion, jalapeño pepper, tomatoes & cilantro dice up to make Pico de gallo and season to taste. In aluminum pan layer tortillas, meat, cheese, Pico de gallo, and continue for 3-4 layers on the top finish with the last of the meat, Pico de gallo, cheese and bake in the oven for 20 mins on 400 degrees. Once finished let cool down and top with sour cream and diced scallions.
